Salads Aren't Just Iceberg Anymore!

Growing up salads were iceberg lettuce, carrots and cucumber and store bought ranch! Not anymore. Why not get creative and add some fun ingredients? Makes salads way more exciting and fun to create and eat! This one is amazing!


Apple Pecan Farro Salad

INGREDIENTS:


  • 2 cups cooked farro (4 servings)

  • 1 large honey crisp apple chopped

  • ¼ cup toasted pecans or walnuts

  • 2 Tbs dried cranberries

  • 4 c spring mix

  • 2 c chopped roasted sweet potato


DRESSING:


  • Whisk together the following:

  • 4 Tbs apple cider vinegar

  • 2 Tbs olive oil

  • 2 tsp dijon mustard

  • 1 Tbs pure maple syrup


In a large bowl throw in spring mix and all salad ingredients, including cooled farro. Add dressing and toss to get it all coated. Serve warm or room temp.
