Parsnip Crust Flatbread


PIZZA! Everyone loves it! You can make pizza crust out of anything. Check out the delicious vegetarian pizza. The crust is made with parsnips and flax meal. Top it with whatever you want! This one is fresh tomato, roasted red pepper, hummus, red onion and jackfruit! YUM!

INGREDIENTS:

  • 1/4 c flax meal

  • 1 lb parsnips - peeled and shredded (4 cups)

  • 1 c almond flour

  • 1/4 tsp sea salt

  • 1 cup your favorite hummus (oil free preferred)

  • 1/2 c roasted red peppers

  • 1 14 oz can jackfruit, drained and chopped

  • 2 fresh roma tomato, sliced

  • 1/3 c chopped red onion

  • 1 Tbs red wine vinegar (I actually used a fig balsamic vinegar I had)

  • 1 Tbs Nutritional Yeast

  • Top with fresh basil and pine nuts (optional)

DIRECTIONS:

  1. Preheat oven to 425. Line baking sheet with parchment. In large bowl combine flax meal and 3/4 c water, stir and let sit 5-10 min. Add parsnips, flour and salt and mix well. Spread on baking sheet and put another piece of parchment on top. Roll out to about 1/4 inch circle. Bake 12-15 min until edges start to get golden.

  2. Mix hummus and roasted reds in a bowl. Spread over top of crust. Add any other toppings - jackfruit, tomato, onion. Sprinkle with vinegar and bake another 10 min until golden and heated through. Top with additional optional topping if using. Sprinkle with Nutritional yeast and serve. Delicious.
