Lentil "Meatballs"

These meatless meatballs are healthy and delicious! 12 ingredients

Produce

  • 3 cloves Garlic

  • 1 1/2 cups Green lentils, cooked

  • 1/4 cup Parsley, fresh

  • 2 Tbsp Shallots

  • 1 Egg

  • 1 Tbsp Tomato paste

  • 2 Tbsp Italian seasonings

  • 1/4 tsp Pepper

  • 1/2 tsp Salt

  • 1 Tbsp Breadcrumbs (i use gluten free)

  • 1/3 cup Parmesan cheese (omit for dairy free)

I use a dry skillet to sauté of garlic and shallots. Just add a tiny bit of water or stock to prevent sticking. In a food processor, combine the cooked garlic and shallots, egg, green lentils, Italian seasonings, parsley, tomato paste, breadcrumbs, parmesan cheese, salt, and pepper. Blend until combined, but not fully pureed so that there is a little texture left.


Roll into balls about 1-2 inches depending on size of your meatballs. Put them on a parchment lined baking sheet and bake at 375 for 15-20 min. Flip them all over and cook another 15-20 until they start to get golden brown.


Serve over zucchini noodles with a little homemade tomato sauce or just eat them up!
