Kale is one of the most nutrient dense vegetables you can eat! It is packed with vitamins and antioxidants like B12,A,K,C, calcium and other cancer fighting substances known to reduce your risk of several types of cancer.
It makes a great base for a salad. This salad I grilled up a bunch of veggies like mushrooms, bell pepper and zucchini. I used Herbs D' Provence on the grilled veggies, no oil. I cut them up and added some chopped roasted sweet potatoes and whipped up a delicious dressing and BAM dinner! Always cook up extra veggies so you have them for the next day.
Kale tip - Kale can be bitter. Before I added my grilled veggies I massage my kale, usually with about 1/3 of an avocado. This breaks down the natural fibers and makes it much less bitter and easy to eat. If you are sticking to no fat, I will squeeze the juice of half a lemon on and massage it a little first. This also adds a great base of flavor!
