Jambalaya Soup


This is spicy, delicious and super healthy!

INGREDIENTS:

1 c chopped celery

1c chopped onion

3 garlic cloves, minced

2 Tbs cajun seasoning

1-2 c chopped bell pepper, any color

1 32 oz box organic veggie stock

1-2 tsp fresh thyme

1-2 cans your favorite beans ( I like the small red or white beans)

8 oz fresh or frozen okra ( I used zucchini if you can’t find okra)

2-3 C cooked brown rice or farro

1 14.5 oz can diced tomato (I like fire roasted)

3 c chopped swiss chard

1 Tbs fresh lemon juice

1 tsp hot sauce

Salt and pepper to taste

DIRECTIONS:


  • In a large pot using a small amount of spray, sauté veggies and cajun seasoning, adding 1-2 Tbs of stock as you go until soft (about 5-7 min) Add broth and thyme. Bring to a simmer, cover and cook 5 more minutes

  • Stir in beans, okra and tomatoes, cook another 10 min uncovered. Add chard and lemon and hot sauce and cook until chard is wilted.

  • Season and serve over rice or farro.

  • You can add a protein if you like. I added shrimp at the end and it was delicious!
