This is spicy, delicious and super healthy!
INGREDIENTS:
1 c chopped celery
1c chopped onion
3 garlic cloves, minced
2 Tbs cajun seasoning
1-2 c chopped bell pepper, any color
1 32 oz box organic veggie stock
1-2 tsp fresh thyme
1-2 cans your favorite beans ( I like the small red or white beans)
8 oz fresh or frozen okra ( I used zucchini if you can’t find okra)
2-3 C cooked brown rice or farro
1 14.5 oz can diced tomato (I like fire roasted)
3 c chopped swiss chard
1 Tbs fresh lemon juice
1 tsp hot sauce
Salt and pepper to taste
DIRECTIONS:
In a large pot using a small amount of spray, sauté veggies and cajun seasoning, adding 1-2 Tbs of stock as you go until soft (about 5-7 min) Add broth and thyme. Bring to a simmer, cover and cook 5 more minutes
Stir in beans, okra and tomatoes, cook another 10 min uncovered. Add chard and lemon and hot sauce and cook until chard is wilted.
Season and serve over rice or farro.
You can add a protein if you like. I added shrimp at the end and it was delicious!
