These are amazing and healthy! There are a ton of flavors here and it's vegetarian, healthy and delicious!
INGREDIENTS:
20oz can of jackfruit in brine, drained and chopped
1 small onion, chopped
1/2 tsp cumin and chili powder
8 oz Portobello chopped
4 oz can green chopped chilis
2 Tbs each soy sauce and water
1 Tbs apple cider vinegar
4 large burrito size tortillas ( I found low carb ones that are only 80 calories and loaded with fiber and protein)
1 c refried beans
1 c shredded cheese (optional)
light sour cream and salsa for topping (optional)
DIRECTIONS
1. Saute onion in a pan (I use only a tiny bit of olive oil spray and stock) No oil or butter
2. Add jackfruit, cumin and chili powder once onions are browned and cook 5-10 min more
3. Mix in mushrooms, green chilies, soy sauce, water, vinegar. Cook about 20 more minutes
4. preheat oven to 400. Spread about 1/4 c refried beans on each tortilla, add 1/4 of jackfruit mixture, add cheese if you want. Fold up sides and roll up like a burrito and place in a pan seam side down. Brush on a little olive oil and bake 25 min until golden and crispy. Serve with toppings. Enjoy!
