BROC-CAULI FARRO CHOPPED SALAD
INGREDIENTS:
3 Cups chopped broccoli
3 Cups chopped cauliflower
2 Cups cucumber
2 Cups cooked farro
1 15 oz can your favorite beans (I used navy beans)
½ c red onion
½ c sliced green olives stuffed with pimento
½ c golden raisins
3 Tbs chopped fresh dill
¼ c fresh lemon juice
1 Tbs pure maple syrup
2 tsp Dijon mustard
1 small clove garlic minced
Salt and pepper to taste
Sliced almonds to garnish
DIRECTIONS:
Steam broccoli and cauliflower in batches about 5 min and let cool
Add next 7 ingredients (through dill) to a large bowl
Add cooled broccoli and cauliflower
In a small bowl whisk together next 6 ingredients plus 2 Tbs water, toss over salad and serve warm or cold
