Apple Walnut Chickpea salad


This sandwich is delicious and good protein with the chickpeas. I usually use gluten free or Ezekial bread because it is sprouted grain (ore about that later).

Ingredients:

1 1/2 c chickpeas cooked

2 Tbs finely chopped onion

1/4 c chopped celery

1/2 c organic apple diced (I like honey crisp)

2 Tbs walnuts


Dressing:

4 tsp tahini

3 Tbs almond milk

2-3 teaspoons lemon juice

1 tsp maple syrup

1 tsp red wine vinegar

1/4 tsp pink sea salt

Directions:

Whisk together dressing. In a separate bowl, mash up chick peas to desired consistency. I like mine a little chunky. Mix in other ingredients. Add dressing and chill for 30-6 min. Toast your bread of choice and add any delicious toppings like sliced fresh tomato or avocado. YUM!
